Menudo Blanco – White Menudo

Today’s recipe comes from my Mom’s kitchen! Menudo is a broth made with beef stomach and hominy. This dish is very popular in most regions of Mexico, there are different variations to the soup and different colors. White, green and red menudo, I grew up eating the white one and this is the recipe that I will be sharing today.

This takes about 5 hours to cook, my Mom makes it like at 5:00am so it can be ready for breakfast at around 9:00 or 10:00am.

Menudo Blanco – White Menudo

Ingredients for soup

3 pounds of beef stomach (cleaned and chopped)

2 pounds of hominy (uncooked)

2 chambray onions

1 Anaheim Chile

3 garlic cloves




Chopped cilantro

Chopped onion (red or white)


Hot sauce

Step 1. Gather the beef stomach, hominy, Anaheim Chile and chambray onions


Step 2. Fill a large pot with water, add beef stomach, hominy, make sure you put the vegetables on top, otherwise they will mash. The Chile, onion and garlic can be removed when menudo is done.


Step 3. Cook at low heat for 4-5 hours until hominy is tender, add cilantro.


Step 4. Remove Chile, garlic and onion and serve


The soup is ready to eat at this point; I like to add lots of cilantro, the juice of one lemon and a few drops of hot sauce. Some people add red or white onion. I hope you enjoy this recipe, please don’t buy the canned stuff.
